| Ingredients (serves 2-3)
400g meehoon(vermicelli rice noodles), soaked in water to soften and drained 1 chicken breast, sliced 3/4 cup cooking oil 2 beaten eggs 2 tablespoon dried chilli paste 2 bean curd cakes, fried and sliced (optional) Handful of shredded cabbage 1 carrot, sliced vertically (4cm) Handful of long green beans, sliced a bit on an angle vertically (4cm) Handful of bean sprouts Chives, cut into 4cm lenghts salt and sugar to taste
Pounded Ingredients
3 shallots 5 cloves garlic 10 dried chillies 3 tablespoon dried shrimp
Method
Heat oil and fry pounded ingredients until fragrant. Add chicken and stir fry until chicken cooked.
Add in rice noodles, chives and stir well.
Add in beaten egg and stir. Mix in your veges, seasoning ingredients and stir well.
Serve noodles garnished with sliced spring onions, omelette strips, sliced red chilli, fried shallots |
